Gary Stoner has expertise in the fields of chemical carcinogenesis and cancer chemoprevention. Early studies in his career were focused on lung cancer and tobacco carcinogenesis. Later, his laboratory conducted research on the identification of naturally-occurring compounds to prevent cancer including ellagic acid and a series of isothiocyanate compounds that were exquisite inhibitors of lung and esophageal cancer induced by N-nitrosamine carcinogens. More recently, his laboratory pioneered a “food-based” approach to cancer prevention using freeze-dried black raspberries. Initially, the berries were found to inhibit chemically-induced cancer in the rodent oral cavity, esophagus, colon and skin through reducing cell proliferation, inflammation, angiogenesis and stimulating apoptosis. In humans, the berries were found to cause partial to total regression of premalignant lesions in the oral cavity, esophagus and colon. He will discuss the results of his studies in his presentation.

Sima Hamadeh is an Assistant Professor and program Coordinator of Nutrition & Dietetics Sciences at Haigazian University-Lebanon. Her interests lie in such areas as the dietary motivations and behaviors in communities; the evolution of nutrition; the epidemiology of obesity especially among youth; the health promotion and communication; and the nutrition policies. Her Master and Doctoral studies were awarded respectively, the “Emerald Literati Network Awards for Excellence 2009” - as Highly Commended Award Winner and the “Prix d’Excellence Scientifique Franco-Libanais 2015” for the outstanding research project. She has several publications in scientific refereed journals and book. She has also many oral communications on public health nutrition in international and national congresses. She works closely with different national ministries and organizations, and international institutions in projects, seminars, researches and community programs. Dr. Hamadeh is also former member of several executive international Scientific Committees and Associations.

Özlem Tokuşoğlu (Associate Professor Dr.) was born in Izmir, Turkey, completed her bachelor’s (1992) and master’s (1996) at Ege University in the Department of Chemistry and also completed her PhD from Ege University in the Department of Food Engineering (2001), Izmir, Turkey. She worked as a researcher at Ege University from 1993 to 2001. She professionally officiated at the Food Science and Nutrition Department at the University of Florida-Gainesville, Florida, USA as a research associate during 1999–2000. Dr.Tokuşoğlu has worked on the faculty staff as an assistant professor at Celal Bayar University, Manisa during 2002–2007, Turkey. Tokuşoğlu, is currently also working as associate professor, faculty member in the Department of Food Engineering of Celal Bayar University from 2007 to now. She’ll be full professor at December Tokuşoğlu was a visiting professor at the Food Science and Nutrition Department at the University of Florida, Gainesville, Florida, USA during 1999–2000 and at the School of Food Science, Washington State University, Pullman, in the State of Washington, USA during April–May 2010. Her study focusses on food quality control, food chemistry, food safety and toxicology, shelf-life of foods and innovative food processing technologies on foods, beverages, and functional products. Her specific study areas are phenolics, phytochemicals, bioactive antioxidative components, food additives, bioactive lipids, their determinations by instrumental techniques, their effects on quality of food and beverages, oil-fats and functional food technologies and the novel food processing effects on food bioactives, food toxicants, and shelf-life of foods and beverages. Dr. Gary Stoner is Professor of Medicine at the Medical College of Wisconsin (MCW) Division of Hematology and Oncology, specializing in the fields of chemical carcinogenesis and cancer chemoprevention. He serves as Director of the Molecular Carcinogenesis and Chemoprevention Program in the newly developing Cancer Center. Dr. Stoner received his PhD in microbiology from the University of Michigan in 1970 and became involved in cancer research as a post-doctoral fellow and research scientist at the University of California-San Diego (UCSD). While at UCSD, his research was focused on the development of a mouse model of lung cancer for the identification of environmental carcinogens and for mechanistic studies of lung carcinogenesis. He then joined the Laboratory of Human Carcinogenesis at the National Cancer Institute where he conducted research on the metabolism of tobacco carcinogens in human lung tissues and developed human lung cell culture systems for investigations of carcinogen/oncogene-induced cell transformation. He became involved in chemoprevention research in the early 1980’s while at the Medical College of Ohio, initially investigating the chemopreventive potential of naturally-occurring ellagitannins and isothiocyanates in the rodent lung and esophagus. As an extension of research with ellagic acid, Dr. Stoner’s laboratory developed a “food-based” approach to the prevention of esophagus and colon cancers in rodents and in humans using freeze-dried black raspberries. His research is documented in more than 350 peer-reviewed publications and book chapters, and he has edited several books. Dr. Stoner joined MCW after nearly 20 years at the Ohio State University College of Medicine where he held the positions of Lucius Wing Endowed Chair in Cancer Research and Therapy, Associate Director for Basic Research and Director of the Chemoprevention Program in the Cancer Center, and Chair of the Division of Environmental Health Sciences and Associate Dean for Research in the College of Public Health. In addition, he served as Director of the Laboratory of Cancer Etiology and Chemoprevention in the Arthur James Cancer Hospital and Richard Solove Research Institute. Dr. Stoner has served on several grant and contract review committees including the NIH Chemical Pathology Study Section, the NCI Cancer Biology and Immunology Contract Review Committee, and as Chair of the NIH Chemo/Dietary Prevention Study Section and the American Cancer Society Advisory Committee on Carcinogenesis, Environment and Nutrition. He has also served as President of the Carcinogenesis and Molecular Biology Specialty Sections of the American Society of Toxicology and of the Ohio Valley Society of Toxicology. He has received numerous awards including the NIH MERIT award, and the Distinguished Alumni Award and Honorary Doctorate from Montana State University. He is also a Fellow in the American Association for the Advancement of Science.

Charles Brennan is a Professor of Food Science at Lincoln University, New Zealand where he is a member of the Faculty of Agriculture and Life Sciences. Brennan's research interests lie in the interface between food science and human nutrition with particular interest in how bio-active ingredients and processing manipulate the nutritional quality of foods in particular the role of plant dietary fibre in manipulating the glycaemic response. Brennan is a graduate of London University, Wye College (BSc in Applied Plant Science) and King's College London (PhD in Food Science and Nutrition). During his career he has also worked at Durham University (UK), Plymouth University (UK) and Massey University (NZ). He currently serves as Editor in chief for the journal International Journal of Molecular Sciences,[2] and International Journal of Food Science & Technology[3] and in the Editorial Board of the Journal of Bioactive Carbohydrates and Dietary Fibre

Dr. Qi’s research has focused on the genetic, nutrition, biochemical risk factors and gene-environment interactions in relation to obesity, type 2 diabetes and the cardiovascular complications in diabetic patients. Dr. Qi is the Principal Investigator of two NIH R01 grants. the Principal Investigator of a American Heart Association Scientist Development Grant, and Co-Principal Investigator of European Foundation for the Study of Diabetes (EFSD) funded lifestyle intervention trial in Chinese women. As Principal Investigator, he is also leading a metabolomic study in two diet intervention trials funded by U.S. – Israel Binational Science Foundation.

Gabriela Riscuta MD, MS. CNS is a Program Director in the Nutritional Science Research Group at the Division of Cancer Prevention, National Cancer Institute .In this position she plans, develops, directs, and coordinates extramural research programs in diet, nutrition and cancer as related to cancer prevention. At NCI, Dr. Riscuta‘s role includes the examination of bioactive food components, i.e. essential and non-essential nutrients, as modifiers of cancer risk and tumor behavior. Some of her projects focus on determining how specific genes and/or molecular targets are influenced by bioactive food components. Her activities include grants management, mentoring students and organizing national and international webinars. Dr. Riscuta received a prestigious Merit Award in 2012 from NIH for the creation of a webinar series for physicians, researchers and those involved with research translation to understand the strength and the weakness of the evidence about the health effects of a food/bioactive food components. Dr. Riscuta also teaches Nutrition courses at Montgomery College, Rockville MD, both on campus and online.

Dr. Gabriela Riscuta current research interests are foods and bioactive food components in relation to health, ageing, cancer prevention and immunocompetence. Her current research focuses on health benefits of probiotics, prebiotics and synbiotics, spices , coffee and mushrooms.

Dr. Gultekin is a Gynae Oncologist, an associated Professor and lately a government official, who is actively involved in several leading cancer organizations, such as a council member of the European Society of Gynaecological Oncology (ESGO) and the International Agency for Research on Cancer (IARC) as well as a board member of the Middle East Cancer Consortium, Black Sea Countries Coalition on Breast and Cervical Carcinoma, Women Against Cervical Cancers (WACC), Asian Pacific Organization for Cancer Prevention and Asian National Cancer Centers Alliance (ANCCA). Furthermore, Dr. Gultekin has conducted several Pan-European oncology trials and is engaged in collaboration projects with the World Health Organization (WHO), International Agency for Research on Cancer(IARC), American Cancer Society (ACS) and American Society of Clinical Oncologist (ASCO). As a member of the Turkish Society of Gynaecological Oncology, Dr. Gultekin officially represents the society on foreign affairs and urged the recognition of gynaecological oncology as a subspecialty in Turkey. In addition, Dr. Gultekin is a member of the editorial board of several international cancer journals and prominent oncology textbooks, including ESGO's Textbook of Gynaecological Oncology, a young reviewer for the International Journal of Gynaecological Cancer, author of over 70 articles in SCI indexed publications and has been a member of the organizing committee of many international gynecologic cancers conferences held in Turkey, including ESGO's Istanbul Biennial Meeting in 2005

Dr. Banz's specialization is in Nutrition Physiology, focusing primarily on the relationship amongst the bioactive components of functional foods, health and gene-nutrient interaction. Much of his research is concentrated on the health of soybeans, soybean phytochemicals and synthetic estrogens ranging across a wide spectrum of topics, from basic mechanistic research to applied human studies. Dr. Banz teaches undergraduate and graduate courses in Nutrition and Dietetics.

Treatment and prevention of obesity and its associated syndromes (metabolic syndrome, Type 2 diabetes mellitus, nonalcoholic fatty liver, and heart disease). Demonstrated unique anti-diabetic effects of numerous plant extracts (e.g., soybean, milk, flaxseed and ginseng extracts) and synthetic compounds. In preclinical rat models, some of the compounds tested have exhibited efficacy in controlling specific diabetic parameters and cardiovascular disease risk factors. Performing further laboratory and preclinical tests to help determine the efficacy of the most promising plant extracts and synthetic compounds identified.

Omer Kucuk, MD, comes to Winship Cancer Institute from the Karmanos Cancer Center at Wayne State University in Detroit where he was a professor and co-leader of the population sciences and prevention program and member of the genitourinary and head and neck cancer multidisciplinary groups. Before joining the medical staff at Wayne State University, Dr. Kucuk served as professor and researcher at the University of Hawaii's John A. Burns School of Medicine in Honolulu.

Nutrition and cancer therapy are Dr. Kucuk's primary research focus. He has published extensively on various nutrients and botanicals alone and in combination with chemotherapy and radiation. Dr. Kucuk has been conducting preclinical and clinical studies with soy isoflavones, lycopene and other nutritional and botanical compounds since 1996. He is investigating the effects of micronutrients and phytochemicals on biomarkers of cell growth, differentiation, metastasis, inflammation, oxidative stress, DNA methylation and gene expression in a variety of cancers. His research also includes clinical studies on the epigenetic effects of botanicals, physical activity and relaxation techniques such as meditation and yoga.

Osama Ibrahim is a highly-experienced Principal Research Scientist with particular expertise in the field of microbiology, molecular biology, food safety, and bioprocessing for both pharmaceutical and food ingredients. He is knowledgeable in microbial screening /culture improvement; molecular biology and fermentation research for antibiotics, enzymes, therapeutic proteins, organic acids and food flavors; Biochemistry for metabolic pathways and enzymes kinetics, enzymes immobilization, bioconversion, and Analytical Biochemistry. Dr. Ibrahim was external research liaison for Kraft Foods with Universities for research projects related to molecular biology and microbial screening and holds three bioprocessing patents. In January 2005, he accepted an early retirement offer from Kraft Foods and in the same year he formed his own biotechnology company providing technical and marketing consultation for new startup biotechnology and food companies.

Eileen Kennedy is the Dean of the Friedman School of Nutrition Science and Policy at Tufts University and was the first Director of USDA's Center for Nutrition Policy and Promotion. Kennedy holds an undergraduate degree from Hunter College, two master's degrees from Pennsylvania State University, and a Doctor of Science in Nutrition from Harvard's School of Public Health. Kennedy has long been involved in the academic arena of nutrition conducting research and teaching at Tufts, Columbia University, Cornell University and Johns Hopkins University. In 2008, Dr. Kennedy was named president of the "Smart Choices" board. “Smart Choices” is a front of label nutrition benchmarking system, a program whose criteria are based on government dietary guidelines and widely accepted nutritional standards.

Dr. Neeta Singh has completed his PhD from Oregon State University followed by MBA in International Affairs and is a Registered Dietitian. Dr. Singh serves as Chair of Nutrition Program with School of Methemetics, Science & Engineering at University of Incarnate, San Antonio, Texas. Her initial research was in artificial intelligence applications in areas of food aid distribution. From past 7 years Dr. Singh has is working on various food sustainability projects as means of improving nutritional status among rural population in the Republic of Tanzania. She has presented her work at various international venues, published in books and has been serving as an editorial board memeber of several international journals.

Beraat Özçelik, after graduation from Ege University in 1990, Food Engineering Department, has gained her Ms and PhD degrees from ITU Food Engineering Department. She worked as visiting scholar at Ohio State University Food Science and Technology Department, for her post-doctorate study. Having a number of scientific national and international publications, her research studies focused on functional foods and nutraceuticals, health effects of bioactive food compounds, nanoencapsulation and bioavailability. To date, she worked as coordinator or researcher in many EU projects, and conducted TUBITAK and other national projects. Having scientific committee memberships in Turkish Food Codex Commitee and some foundations, she has taken place in Editorial Boards of Scientific journals and in organizing committee of international congress. Being a former Head of Food Engineering Department and Rectorate advisor, Prof. Dr. Beraat Özçelik is actively working as Dean of the Faculty.

Mihalis holds a Personal Chair in Nutrition & Toxicology at the School of Life Sciences, Heriot-Watt University, UK. Dr Kanwar, group leader of the Nanomedicine-Laboratory of Immunology and Molecular Biomedical Research has a national and international reputation in investigating fundamental and applied molecular aspects of cancer and chronic inflammation. Currently, his major field if interest are nanomedicine based delivery systems for therapy/diagnosis, biotechnology, protein engineering of therapeutic proteins and find their mechanism of actions. Dr. Gaspar Ros Berruezo is Professor of Human Nutrition and Food Science (including Food Safety) at the University of Murcia (UM), serving this Institution for more than 25 years. He has been Post-Doc Fulbright Scholar in 1989-90 at the University of Tennessee at Knoxville, USA as visiting professor. Project leader of the VITALIS Centre for Research in Food Science, Human Nutrition and Health in the Mediterranean area, under construction. Marica Bakovic completed BSc in Chemistry and PhD in Biological Chemistry at the University of Alberta. She received post-doctoral awards from Medical Research Council and Alberta Heritage Foundation. Before coming to the University of Guelph, she worked in the area of molecular and cell biology of lipid metabolism at the Faculty of Medicine, University of Alberta. Currently, she is Professor in the Department of Human Health and Nutritional Sciences at the University of Guelph. Dr. Bakovic has a long-lasting interest in nutrition and metabolism, especially in the area of regulation of membrane phospholipids, fatty acids, and methyl-group donors.

Dr. Alba Naudí has completed her PhD in Biomedical Sciences in the area of physiology at the Faculty of Medicine in the University of Lleida in 2010. Nowadays, she is professor in the Experimental Medicine Department from the University of Lleida, teaching Nutricionists, Biomedical and Medical students. Her field of research has focused on the study of the aging process and neurodegenerative diseases from the point of view of oxidative stress and how the nutritionals interventions can modulate this process. She has published more than 50 papers in reputed journals and has served as a peer reviewer for a number of scientific journals.
